A stage sits on the Plaza terrace, situated along a lengthy pathway beyond the reception and lounge bar of the Radisson Blu lobby. Positioned amidst two sets of speakers, a three-person band comprising a vocalist, a violinist, and a saxophonist alternates in delivering lively renditions of popular afro-beat melodies. Several seats are arranged in front of the band, where patrons dressed in business-casual attire are enjoying a culinary delight that seems to be gaining popularity among Rwandans: sushi. On a particular side of the dining room, there is an elongated sushi bar where a seasoned chef skillfully prepares sushi, providing a charismatic display. Radisson offers an impressive selection of 10 sushi variations. The sauces and embellishments accompanying contemporary Japanese cuisine are presented elegantly and stylishly. The sushi rolls consist of simple combinations, such as tuna, yellowtail, and salmon, interspersed with delicate slices of cucumber, radish, and the flavourful belly meat of tilapia. Some rolls are expertly layered with avocado, lettuce, and mango, and then topped off with a drizzle of soy sauce and mayonnaise. Even the most basic appetisers, such as salads, appeared interesting. They were continuously refreshed, accompanied by radish wedges and a delicate sprinkle of sesame seeds as the perfect finishing touch. Sushi Night, the newest addition to Radisson’s expanding range of dining experiences, made its debut last Friday and was already garnering a loyal following. Overhearing conversations, it was evident that many diners intended to become regulars, having established a warm rapport with Chef Callixte Mbonyimana, whose face lit up with a broad smile each time they approached the buffet table. “The sushi is fantastic,” exclaimed one visitor, who preferred to remain anonymous, expressing her delight in pairing sushi with wine. “I hope that Sushi Night will continue, perhaps even incorporating karaoke to enhance the overall enjoyment.” In each edition, you can expect the utmost precision in mise en place and impeccably crafted hand rolls prepared by Mbonyimana, a skilled 33-year-old sushi specialist with seven years of experience. In addition to his signature hand rolls, he will also offer a variety of sushi pieces, tailored to the preferences of the patrons and based on the fresh ingredients available for the day. When asked about popular choices, Mbonyimana mentioned that “guests particularly enjoy the salmon avocado roll and the tempura California roll.” Radisson is far from an ordinary hospitality establishment, boasting a brilliantly modern interior and tranquil atmosphere. The carefully selected music, combined with the attentive and considerate wait staff, suggests the extraordinary measures the hotel takes to distinguish itself in terms of ambiance in Kigali. Every aspect feels meticulously curated, intentionally designed to elevate the fine dining experience. Why Sushi night instead of, say, burgers? “Radisson is a global brand with a presence in various markets, and we recognise the diverse nationalities present in the Rwandan market,” responded Nice Uwase, the Commercial Director at Radisson. “Therefore, we aim to cater to different culinary preferences that resonate with diverse communities within this market.” Uwase also noted that culinary cross-pollination is a common occurrence, especially in Rwanda. “That's precisely why we continuously update our menu, providing our patrons with the opportunity to discover new flavours and recipes. The possibilities are endless. It’s clear that they have wholeheartedly embraced sushi,” she remarked with a smile. With a capacity of up to 80 guests, the restaurant sets the stage for Sushi Night, taking place every Friday from 7:00 PM to 9:00 PM. To reach the sushi counter, patrons must pass through a cosy liquor bar. Those who arrive early or wish to linger after their meal can relax on the comfortable leather chairs, savouring a glass of wine from the extensive menu while enjoying live performances.
