Wait for the peas to cool and drain it.Get a large bowl; pour the rice and the peas in the bowl. Add the chicken, mayonnaise, vinegar and pepper. Avoid over stirring the mixture. Also add the minced garlic. Serve the mixture on salad greens or a bed of lettuce, and garnish with sliced tomatoes, cucumber and onions.
