‘Dodo’ (from the amaranth plant family) is one vegetable that grows pretty much anywhere, in your backyard, even by the road. It’s a vegetable that’s not used often, yet so delicious and easy to get. Here is a fun new way to prepare it. PREPARATION: 30 mins SERVES: 4 INGREDIENTS * Whole wheat Spaghetti (you can also use normal pasta, but for a much healthier meal, whole wheat is better) 100g per person. * 400g of minced meat * Two handfuls of dodo * Fresh cream * Butter * Green pepper * Red onions * Tomatoes * Salt/pepper PREPARATION STEP 1: Slice your tomatoes, onions and green pepper into julienne Chop your dodo STEP 2: In a hot pan, add two big spoons of butter, let it melt for a minute. Add the minced meat, panfry it for 10 minutes, add 2 ½ of warm water inside. Add your chopped dodo, green pepper, onions and garlic in the pan. Cook it all together for 5 minutes. Add two big spoons of fresh cream. Let it cook for 10 minutes on low heat. Add 2 teaspoons of salt and pepper. Add tomatoes one minute before the dish is ready.
