Preparation time: 1hour 30mins Ingredients A cup of long-grain riceA cup of fresh green peasA cup diced chickenMayonnaise, Salt and pepper Lettuce or salad greens and sliced tomatoesVegetable oil and vinegarMinced    garlic Diced seeded cucumbers and thinly sliced green onion    Preparation:Boil the rice separately and cook the peas as well.  Wait for the peas to cool and drain it.Get a large bowl; pour the rice and the peas in the bowl. Add the chicken, mayonnaise, vinegar and pepper.  Avoid over stirring the mixture.  Also add the minced garlic. Serve the mixture on salad greens or a bed of lettuce, and garnish with sliced tomatoes, cucumber and onions.
