1. Pour the lemon juice in a large bowl; add the lemon peel, garlic, salt, and pepper. Whisk to combine. With a tip of a sharp knife, cut into each chicken piece one or two times by about 1/2 an inch, this will help the mixture of the lemon ingredients to infiltrate. 2. Place the chicken pieces into the bowl of the lemon ingredients. Use a spoon to soak the chicken in the bowl.  Put the bowl in the refrigerator for an hour 3. Preheat the oven to 425°F. Remove chicken from the bowl and place it in a single layer in a large baking dish. Use a brush to apply the melted butter on to each piece of chicken.4. Bake for an hour until the chicken is crispy brown.  Serve after 15mins with steamed rice.
