If you have a party at your place and would like roast chicken, you don’t need to hire a chef. Learn to do it yourself. 

The simplest recipe of roasting chicken without the need of many ingredients does not require a lot, says Olivier Mugisha, chief cook at African Villa Restaurant.

"You just need a chicken, salt, black pepper and a skillet and an oven to prepare the sweetest and juiciest chicken in just a few minutes,” he says.

What you’ll need

•One chicken•1 tablespoon kosher salt•coarsely ground black pepper, to taste

Preparation

•Cut lemon and chop carrots and add them to the skillet halfway through.

•Place your oven rack in the lower third of the oven and preheat to 450 degrees.

•Get yourself a good chicken and rinse it inside and out carefully and dry it out. The chicken must be bone dry or it will steam rather than brown.

•Set it in a cast-iron skillet and generously season it with 1 tablespoon of salt and coarsely ground black pepper to taste.

•Place the skillet in the preheated oven for about 45 minutes and go about your business.

The high heat turns the chicken to a golden brown colour, and it’s very yummy!
